About Courtney
Living with EoE has deeply shaped how I practice nutrition and connect with patients. With 13 years as a Registered Dietitian and an MS in Human Nutrition from Georgia State after studying Food and Nutrition at Clemson, I blend clinical hospital experience and private practice insight to support complex medical needs. As a dietitian with additional credentials such as CNSC and CCTD, I draw on both science and lived experience. When I am not problem solving nutrition, you might find me hiking, skiing, painting in watercolor, or working on a cross stitch project.

I use current research to guide practical, direct steps we can implement together, while always staying warm and judgment-free. I focus on sustainable habits that fit your life, not quick fixes or diet culture. That means prioritizing behaviors that support your health regardless of weight, and educating you so decisions become easier over time. We will tackle nutrition as part of your whole life, addressing medical needs, emotions, and routines with clear, actionable plans we can adjust as we learn what works.
Your first session with Courtney
We will start by reviewing your medical history and how EoE or other conditions affect your daily life, then take a thoughtful look at your relationship with food so we understand patterns and priorities. I will listen first, without judgment, and help translate information into one or two realistic short-term goals we can begin working on right away. You do not need to have everything figured out, just bring your questions and experiences, and we will build a practical, sustainable plan together.
