About Elizabeth

Hello, I'm Beth Eckert. I have been a registered dietitian for over 25 years, including more than a decade as a diabetes specialist. While my career has taken me through a variety of clinical settings helping people manage their chronic diseases, I also have a passion for helping people prevent chronic conditions before they start. My own journey as a mother to three, including a child with food allergies, has given me a deep, personal understanding of how to navigate unique dietary needs. Through Nourish, I'm excited to partner with you and provide practical, compassionate guidance on your nutrition journey."

My counseling style is warm, empathetic, and collaborative. My recommendations will be evidence-based, ensuring your receive the most current guidance. In our sessions, you can expect a non-judgmental space where we will work together to uncover the root cause of your concerns. I don't hand you a rigid meal plan and send you on your way. Instead, I'll empower you with the knowledge and practical strategies you need to make informed choices that fit your unique lifestyle.

Your first session with Elizabeth

During our first session together, I'll ask you various questions about your health history, food preferences, eating routine, lifestyle, daily activities, and your relationship with food. Getting to know you as a whole person will help me to make realistic recommendations and provide guidance that can make a difference for you. You'll leave this session with clear, manageable steps to get started.
