About Elizabeth

I am a Registered Dietitian Nutritionist with advanced training in clinical nutrition, maternal and child health, and community nutrition. I hold a Master of Science in Clinical Nutrition and Dietetics from the University of Tennessee, graduating with high honors and completing clinical rotations in adult and pediatric acute care, outpatient counseling, and community settings. I also earned a Bachelor’s degree in Nutrition and Dietetics and an Associate of Science in Nutrition and Food Science, building a strong foundation in medical nutrition therapy and evidence-based practice. Along with my clinical background, I am an ISSA-certified personal trainer, online coach, and sports nutritionist, blending nutrition expertise with fitness and behavior-change support. I am passionate about empowering individuals through education, strengthening community food systems, and providing compassionate, culturally informed care across the lifespan.

Approach to care

My approach to care is grounded in compassion, evidence-based practice, and the belief that every individual’s health journey is unique. I take an individualized, client-centered approach, working collaboratively to understand each person’s goals, values, lifestyle, and challenges. Whether supporting adults, pediatrics, or families, I prioritize what matters most to them, ensuring that every plan is realistic, sustainable, and aligned with their personal vision of health. I blend clinical nutrition expertise with practical strategies, meeting clients where they are and helping them build confidence through achievable steps. Rather than offering one-size-fits-all solutions, I tailor every recommendation to fit each individual’s needs, preferences, and daily realities. My goal is to empower clients with the knowledge and tools they need to make meaningful, lasting changes, while providing support, accountability, and encouragement along the way.

Your first session with Elizabeth

During your first nutrition appointment, we’ll talk through your medical history, current health concerns, daily habits, and routines to help me understand your overall lifestyle. You’ll have the opportunity to share what’s been challenging for you and what you hope to achieve. Together, we’ll identify your personal goals and begin creating an individualized plan tailored to what matters most to you. My goal is to make this session comfortable, informative, and focused entirely on supporting your success.
