I’m Libby Mills—a Culinary Registered Dietitian Nutritionist and lifelong food enthusiast. I believe nutrition should be delicious, joyful, and accessible to everyone. Rooted in my Midwestern background, inspired by global travels, and fueled by an endless love for vibrant, healthy food, for me nutrition is about celebrating the connections across stages of life, cultures, and backgrounds with respect to flavors that honor culture, tradition, and ingredients that are both wholesome and affordable. This is evident in my nutrition counseling and radio show podcast, Libby’s Luncheonette, serves up home cooked conversations, tasty tips, and insights into how our food system—local and global—shapes personal, community, and ecological well being. I’m dedicated to the dietetics profession and upholding it’s highest standards. A university teacher and preceptor, I stay current while educating and mentoring students.

I combine evidence-based strategies with motivational coaching, active listening, and accountability to help you create realistic, actionable steps that lead to lasting results. Your first session with Elizabeth

In our first session, we’ll start by getting to know you—your health goals, lifestyle, food preferences, and any challenges you’ve faced. I’ll ask about your medical history, current habits, and what you’d like to achieve, whether that’s improving energy, managing a condition, or simply feeling better about the way you eat. Together, we’ll: • Set clear, realistic goals that fit your life. • Review your current eating patterns and identify small, doable changes. • Create an action plan that’s personalized, evidence‑based, and flexible. • Talk about resources and tools—like meal ideas, handouts, or strategies—that can support you right away. My approach is collaborative and supportive. You’ll leave the first session with practical steps you can start immediately, and a sense of accountability knowing I’ll be here to guide and encourage you along the way.
