Hi, I'm Natalie Furst, a Registered Dietitian Nutritionist (RDN, LD) and former professional chef with over 25 years of combined experience in food and nutrition. At Nourish, I blend my love of flavorful cooking with evidence-based care to help you reach goals like weight loss, diabetes management, gut health, menopause support, or sports performance always with personalized, sustainable plans and zero judgment. I grew up on a family farm in Corrales, NM, raising goats and making cheese, which sparked my lifelong passion for food. Before becoming a dietitian, I spent years as a high-end chef, cooking for guests like President George W. Bush, Jackie Chan, and Yo-Yo Ma. That hands-on expertise drives my belief that healthy food can and should taste amazing. Today, along with my 16+ years as an RDN I bring creativity, empathy, and fun to every session, helping clients rediscover joy in achieving health goals and building lasting habits.

I believe nutrition is a lifelong partnership, not a quick-fix diet—sustainable change takes time, trust, and understanding. We'll skip the rush to "fix" things. Instead, I'll listen deeply as you share your health history, eating patterns, lifestyle, challenges, joys, and personal wellness goals in your own words. My priority is building genuine rapport and seeing you as a whole person, so future recommendations feel realistic, enjoyable, and truly tailored to your life. Hobbies

Outside of work, I'm married and share my life with three wonderful rescue dogs—Roxy, Bogey, and Woody. I split my time between Albuquerque and Palm Springs, which gives me the perfect balance of mountain trails and desert sunshine, thanks to my geologist father who sparked my love for the outdoors. I'm an avid skier, hiker, and camper. My favorite weekly activities include dog walking, hot yoga, pilates, weight lifting, Orange Theory, and golf. Currently, I serve on the Albuquerque Country Club's board of directors, where I advocate and plan women and youth sports programming. I'm a lifelong music enthusiast, an adventurous traveler (30 countries and counting). I find joy in collecting art, tending my vegetable garden, and reading voraciously—I finished 49 books last year, spanning health, science fiction, technology, and geopolitics. As a Libra, I naturally gravitate toward balance, harmony, and bringing a little beauty into everyday life.
