About Nicholas

Nicholas Spyker is a Registered Dietitian who helps clients build a healthier, more confident relationship with food by blending evidence based nutrition, behavioral coaching, and a deeply personal, supportive approach. Whether you’re navigating metabolic health, emotional eating, eating disorders, digestive concerns, or simply trying to create sustainable habits, Nicholas meets you exactly where you are and helps you move forward with clarity, not overwhelm. Nicholas completed his training as a Registered Dietitian at Ohio State University with a focus on clinical nutrition, functional health, and long-term habit formation. He has worked with a wide range of clients, including those managing Type 2 diabetes, weight concerns, cardiovascular health, gut issues, and people seeking more energy, balance, and confidence in life. Outside of sessions, Nicholas enjoys meditating, cooking, and spending time with family. He loves music, meditating and spending time in the Texas Hill Country.

Approach to care

His philosophy is simple: nutrition should feel empowering, not confusing or restrictive. Sessions with Nicholas feel collaborative and grounded. Each plan is personalized to your goals, lifestyle, culture, preferences, and real-life challenges. Clients often say they appreciate his calm demeanor, strong listening skills, and the way he explains complex nutrition concepts in a clear, practical way.

Your first session with Nicholas

In your first session, we’ll take time to understand your story, your goals, challenges, routines, medical history, and what “feeling better” means to you. From there, we’ll work together to build a personalized plan that feels realistic and sustainable, not restrictive. Each follow-up session focuses on small, meaningful steps forward, troubleshooting barriers, and celebrating progress. You’ll receive clear guidance, practical tools, and ongoing support so you never feel lost or alone in the process.
