About Nicole

Hi, I’m Nicole Seedig, MS, RDN, a Registered Dietitian Nutritionist passionate about helping clients feel at home in their bodies through sustainable, realistic nutrition. I believe health isn’t about perfection—it’s about finding what works for you and building confidence in your choices. I’ve worked with clients across a range of goals and health concerns, from chronic disease management and cancer recovery to weight and energy balance. My background includes clinical nutrition, private practice, and exercise science, allowing me to blend evidence-based care with a practical, whole-person approach. Outside of work, I’m a cowgirl at heart who loves being outdoors with my horses, moving my body, and connecting through food and community.

Approach to care

My approach is rooted in compassion, curiosity, and collaboration. I believe lasting change grows from consistency and self-understanding, not deprivation or rigid rules. In our work together, I focus on identifying what nourishes your body and supports your life; whether that means improving lab values, restoring energy, or creating a peaceful relationship with food. I integrate medical nutrition therapy with mindful, evidence-based coaching tools such as motivational interviewing and behavior-change strategies. Each session is personalized to help you make progress that feels realistic, empowering, and sustainable.

Your first session with Nicole

Our first session is all about getting to know you; your goals, lifestyle, health history, and what’s most important right now. I’ll ask questions to understand your unique needs, challenges, and preferences so we can create a plan that truly fits your life. You can expect a collaborative conversation, not a lecture. Together, we’ll outline realistic next steps and begin shaping a roadmap toward your goals, whether that means addressing symptoms, supporting a medical condition, or building healthier habits. My goal is for you to leave feeling heard, supported, and clear on where we’re headed next.
