About Sheila

Sheila Simpson is a Registered Dietitian and nutrition consultant with over 25 years of experience helping individuals and families improve their health through practical, evidence-based nutrition. As the President and Owner of Consulting Registered Dietitians, Inc., Sheila specializes in individualized nutrition counseling across the lifespan, including prenatal nutrition, early childhood nutrition, weight management, and chronic disease prevention. She holds certifications in Adult Weight Management and Childhood & Adolescent Weight Management and is known for providing culturally responsive, realistic guidance tailored to each client's unique needs and lifestyle. A significant part of Sheila's career was spent in private practice, where she provided one-on-one nutrition counseling for nearly nine years. During this time, she worked closely with clients managing weight concerns, pre-diabetes, heart disease, hypertension, and multiple co-morbid conditions.

Approach to care

Sheila's approach emphasizes sustainable behavior change, improving lab values and clinical outcomes while helping clients develop a healthier, more confident relationship with food. She offers compassionate, personalized nutrition care in a supportive and judgment-free environment. Her goal is to empower clients with practical tools, education, and confidence to make lasting changes that support long-term health, well-being, and quality of life for themselves and their families.

Your first session with Sheila

During your first session with Sheila, she will begin by discussing the reason for your visit and taking time to understand your health concerns, food preferences, and personal goals for nutrition counseling. Together, you will review any relevant medical history, lab results, and your physician’s recommendations to ensure a coordinated and personalized approach to care. Sheila will work with you to create realistic, short-term goals and practical meal planning strategies that fit your lifestyle. These achievable steps are designed to help you gradually build healthier habits and meaningful behavior changes. Over time, these changes support long-term success and progress toward your overall health goals. Rather than focusing on restrictive dieting, Sheila emphasizes sustainable behavior modification that promotes lasting results. Diets are temporary, but healthy habits and behavior change can support a lifetime of improved health, confidence, and well-being.
