About Valerie

Hi, I’m Val, a Latinx RD passionate about helping individuals find balance and joy in nourishing their body. Nourishment goes beyond the food we eat; it encompasses our relationship with food, our body, what we do for our mental well-being and the activities we engage in on a day to day for our overall health. I’d love to explore what ‘health’ looks like for you and challenge any beliefs that may no longer be serving you. Let's work together to create a flexible, individualized AND enjoyable approach to eating that fuels a full and vibrant life, no matter where you are in your unique food or healing journey.

Approach to care

Collaboration and compassion lie at the heart of my approach. I practice through a weight-inclusive lens and Health at Every Size® (HAES) framework. I strive to create a space that is nonjudgmental, respecting where you are in this season of life. I value you as a ‘whole person’ and do not believe there is a ‘one size fits all’ approach to care. I understand your goals and aspirations can change and I'm here to offer flexible support every step of the way. I will also add humor to our sessions, when appropriate.

Your first session with Valerie

I’d love to know who YOU are, beyond your nutrition and medical history (which we will absolutely discuss). I want to understand your unique lived experiences that bring you here today, whether that is learning about your new or existing diagnosis, exploring the many ways your relationship with food, movement or your body has been challenged by today’s society OR simply providing you with a space to collaborate and share anything on your mind. I want to understand how to best support you moving forward and that can look different for everyone. We will establish goals to work towards and adjust as needed.

Bachelor's of Science in Nutrition and Food at Texas State University Completed a Dietetic Internship with a focus in Public Health at Tri-County Public Health Department in Colorado

Hobbies

Enjoying the outdoors, rock climbing, film photography, thrift-shopping and exploring local coffee shops. I will find ANY excuse to get my friends together over food, so you can often find me hosting dinner parties, themed potlucks, game nights or hosting an 'at home' coffee shop. Yes, dogs are allowed to any event listed above.
